Overview

A private day in Kinosaki Onsen, at the northern edge of Hyogo: a hot-spring town the size of a village, with willow-lined canals and 1,300 years of bathhouse tradition behind its seven public baths. The day starts here, then opens out into the country that frames the town.

First, the 1.6-million-year-old hexagonal basalt columns of Genbudo Park, quarried in the Edo period for the very stone that now lines Kinosaki's streets and canals. Then the Oriental White Stork sanctuary, where a local programme of chemical-free rice farming has brought an extinct-in-the-wild bird back into the sky and produced the prized Kounotori rice in the process.

Lunch is a six-course sushi counter at Yashio, with Owner-Chef Shiomi demonstrating sabaiki (the filleting of whole fish) and pairing the meal with a flight of three local sakes.

The afternoon walks back into Kinosaki for the Mt. Daishi ropeway, awarded one star in the Michelin Green Guide Japon for the view over the town's tiled roofs to the Sea of Japan. The day ends at Kamiya studio for a quiet hour of Mugiwara Zaiku, a 300-year-old craft unique to the region in which dyed barley straw is laid in geometric patterns on a lacquered wooden box to take home. A full day by chartered taxi with an English-speaking guide, out of your Kinosaki ryokan at 09:00 and back by 16:30.

❖ Genbudo Park

09:15 - 10:00 (0:45 min)

Five great basalt cliffs along the Maruyama River, their hexagonal columns formed by volcanic activity 1.6 million years ago and exposed by erosion. The rock was quarried in the Edo period and used to build the embankments and stone stairs that still line the willow-shaded canals of Kinosaki Onsen today: the town you will walk through in the afternoon is built from this hillside.


❖ Oriental White Stork Museum

10:15 - 11:00 (0:45 min)

The Oriental White Stork was once extinct in the wild in Japan. Toyooka's decades-long reintroduction programme worked at the problem from the other end, restoring the bird's habitat by paying local farmers to grow rice without pesticides. Today Kounotori storks nest in the surrounding fields and the same farms produce Kounotori Hagukumu Mai, a premium rice sold on the strength of its growing method.


❖ Sushi Masterclass & 6-Course Lunch at Yashio

11:30 - 13:00 (1:30 h)

At Yashio, Owner-Chef Shiomi teaches the basics of sabaiki, the filleting of a whole fish, before sitting you down for a sophisticated six-course lunch built around the morning's catch. Three local sake pairings accompany the meal. Dietary adjustments (allergies, vegetarian) are arranged ahead of the tour.


❖ Kinosaki Town Walk & Mt. Daishi Ropeway

13:50 - 15:20 (1:30 h)

A guided walk through Kinosaki Onsen's 1,300-year-old bathhouse district: the seven sotoyu public baths, the willow canals, the wooden street frontages that give the town its atmosphere. The ropeway then lifts you above the roofs to Mt. Daishi, where the Michelin Green Guide Japon awards one star to the view over tiled roofs, the Maruyama River, and the distant mountains of the San'in coast.


❖ Straw Craft Workshop at Kamiya

15:20 - 16:20 (1:00 h)

Kamiya studio has kept Mugiwara Zaiku, a craft unique to Kinosaki Onsen, alive for more than 300 years. Barley straw is dyed in brilliant colours, then laid in geometric patterns on a lacquered wooden box. You make your own piece under the artisan's guidance, a small finished object to carry back with you from the region.

Back to your Kinosaki Onsen ryokan by chartered taxi. In time for the sotoyu bath crawl before dinner.
