Kochi Knife Making Experience: A Private Tosa Blade-Making Workshop for Cruise Travelers

Spend a day with a Tosa master forging your own Japanese knife from iron and steel in Kochi.

Overview

For travelers who reach Kochi by cruise ship, aboard vessels such as the Diamond Princess, Celebrity Millennium, Westerdam, Riviera, and Azamara, this is a shore excursion far off the usual sightseeing track: a full day spent forging your own Japanese kitchen knife by hand, from raw iron and steel to a finished blade you carry home. An English-speaking interpreter and guide meets you at Kochi Port and rides with you by private car to the workshop, so the day between ship and forge unfolds without a single logistical worry.


The knife you make belongs to the tradition of Tosa Uchihamono, one of Japan's three great cutlery styles, and you work under a master craftsman recognized as a Tosa artisan. Over the course of the day you follow the blade through every stage of its making, from the first heat of the forge to the final pass across the sharpening stones. You are never left to manage alone: the craftsman assists as needed, which keeps the experience safe and genuinely enjoyable for everyone aged 11 and older.


Your host is Tsuyoshi Sakoda, the craftsman behind Sakoda Hamono, who trained in Fukui Prefecture, long celebrated for its exquisite cutlery. After returning to Kochi he kept reaching for higher skill, visiting knife specialty stores and masters throughout Japan to deepen his knowledge of forging and sharpening. Despite the extra effort it demands, he insists on finishing every blade by hand-sharpening, so that the knives he makes are ones their owners can cherish for a long time.


This is a day for travelers who would rather immerse themselves in genuine local culture than follow the typical sightseeing circuit common on cruise ship shore excursions, and who like the idea of carrying home a timeless Japanese masterpiece, useful in everyday life, as a memorable souvenir of the journey. You leave with a one-of-a-kind knife shaped by your own hands, and with it a rekindled spirit of taking care of the things you own.

❖ Pick-up at Kochi Cruise Terminal

Your interpreter greets you inside the Kochi Cruise Terminal and travels with you to the workshop by private car. There are no restaurants near the workshop, so on the way from the port you stop to buy lunch at a supermarket or convenience store.

❖ Knife Making at Sakoda Hamono

10:00 - 16:00 (6:00 h)

At Sakoda Hamono you make a double-edged, black-forged knife from iron and steel. The teacher walks you through every step of the process:

  1. Heat the forge and forge the steel, which is a combination of high-carbon steel and stainless steel.

  2. Heat the steel and hammer it out to form the basic shape of the knife. (The handle part is made by the instructor.)

  3. Once the basic knife shape has cooled, hammer it again.

  4. Use a grinder and a manual cutting machine to shape the knife.

  5. Coat the knife with clay, heat it, then quench it to harden the blade. (Afterward, the blade is tempered in a hot-air furnace, and this is where you take a break for about an hour.)

  6. After tempering, the knife is rough-polished using a water whetstone to thin the edge.

  7. Use a belt grinder to refine the polished section.

  8. Further smooth and polish the knife.

  9. Finally, sharpen the blade using a series of sharpening stones.

  10. Attach the handle, and the knife is complete.

You take part in the whole sequence, but you do not have to do everything yourself; the instructor assists as needed, so the day stays safe and enjoyable for everyone aged 11 and older. The blade rests in a hot-air furnace during the roughly one-hour tempering, and this is when you break for the lunch you bought on the way.

❖ Drop off at Kochi Port

With your finished knife in hand, the interpreter drives you back to Kochi Port. The start and end times can be adjusted to match your cruise ship's arrival and departure.

  • The experience needs about 2 hours of round-trip travel between Kochi Port and the workshop plus 6 hours at the workshop, roughly 9 hours in total. You cannot take part if your cruise ship is docked in Kochi for less than 9 hours.

  • There is a one-hour lunch break, and there are no restaurants near the workshop. Please buy lunch at a supermarket or convenience store on the way from Kochi Port to Sakoda Hamono.

  • The start and end times can be adjusted to match your cruise ship's arrival and departure times.

  • Participants must be aged 11 or older.
